Recipe of Soto Banjar

Soto Banjar is the Banjar typical food. Tribal Banjar located in South Borneo.
Main ingredient of Soto Banjar is chicken and aromatic spices















Soto Banjar Ingredients :
  • 1 young chicken
  • 2 boiled potatoes cut into pieces
  • 100 grams of vermicelli soaked
  • 3 tablespoons onions fried
  • 1 tablespoon fried garlic
  • 5 stalks celery chopped
  • 4 eggs hard-boiled eggs cut in four parts
  • 4 perkedels
  • 4 tablespoons oil for sauteing
  • 1 ketupat banjar cut
  • 1 cinnamon stik
  • 2 tablespoons soy sauce
  • 2 fruits lime
  • 1500 ml water

Spice Paste :
  • 4 pieces onion
  • 3 cloves garlic
  • 1/2 teaspoons fennel
  • 1/2 teaspoons cummin
  • 3 cm ginger
  • 2 cm turmeric
  • 1/2 teaspoons pepper
  • 1 teaspoon salt

How to Make Soto Banjar :
  • Poached chicken and cinnamon to the boil
  • Saute the spice paste using cooking oil until fragrant, then add to the stew of chicken, poached chicken again until tender.
  • Lift the chicken from the stew and then set aside to cool then shred

mixing :
  • Place the ketupat on top of the bowl along with vermicelli, potatoes, perkedel, shredded chicken, egg, then flush with soup broth. Sprinkle the fried onions, fried garlic, celery and limes, and serve.
